How to get tall muffin tops

Make sure your baking soda is fresh  Start hot and turn down the temperature of the oven Fill the muffin tin completely Don't open the oven door while muffins are baking


Whisk together the vegetable oil, sour cream, egg, sourdough discard and brown sugar


Sift the all-purpose flour, salt, baking soda and cocoa powder into the wet ingredients


Pour the hot milk and espresso into the batter


Fold the chocolate chips into the batter


Divide the batter evenly into a muffin tin with paper liners


Preheat oven to 450 F, turn oven down to 375 and bake for 20 to 25 minutes
